Simple Salmon Recipe



Fish is a rich source of what's good for us and it's tasty too. It's easy to prepare, including simple salmon recipes. Stocks of wild salmon are decreasing unfortunately, with the exception of wild Alaskan salmon, which is plentiful. More and more farmed salmon is being sold however.

Many top chefs, when writing books and making television appearances, include simple salmon recipes. Fishing for salmon has long been associated with vacations in Scotland and Scottish chef, Nick Nairn is responsible for Peppered Salmon with Whisky Cream Sauce, just the thing for a cold evening. It's a one-pan dish requiring salmon steaks, a tablespoon of whisky, Dijon mustard, double cream, black and white peppercorns and fresh chives for the garnish. He also presents Seared Salmon in Hot Potato and Tomato Salad. This calls for salmon escalopes, salad potatoes, cherry tomatoes, fresh basil leaves, lemon juice, and Parmesan cheese shavings.

UK celebrity chef, Jamie Oliver is an ardent campaigner for healthy eating and is known for his easy to follow dishes. He brings these sensibilities to a simple salmon recipe for Summer Tray Baked Salmon, an oven-baked dish with salmon fillets (scaled, pinboned and filleted), vegetables and herbs. Any vegetable in season can be used and the recipe specifies runner beans, green beans, yellow French beans, podded peas, and new potatoes. Other ingredients include the zest of a lemon, fresh basil and fennel. Jamie recommends a garlic mayonnaise accompaniment. He also advocates Smoked Salmon and Scrambled Eggs, served on buttered toast. This makes a terrific light lunch or breakfast. Season the eggs, add black pepper and serve with lemon wedges.

Rick Stein is a UK chef, who specializes in fish dishes. He presents TV cookery programs and runs a successful restaurant in Cornwall. His simple salmon recipes include Alaska Salmon Tartare, made with Alaska salmon fillet and smoked Alaska salmon. Other ingredients are cayenne pepper, garlic, shallots, lemon juice, and Worcester Sauce. The garnish requires lambs lettuce, olive oil, balsamic vinegar, ground black pepper and sea salt. Rick's Roasted Salmon with Salsa Verde is another simple salmon recipe for salmon fillets with capers, anchovy fillets in olive oil, tomatoes on the vine, chili flakes, garlic, fresh thyme, parsley leaves and mint leaves.

Madhur Jaffrey has two careers, combining her work as an actress and a chef. She specializes in Indian cookery and has been a familiar face on British TV but now lives in New York. Her cookery books have made Indian cookery accessible to people who were afraid to cook Indian food for themselves. Meat, vegetarian and fish dishes all use a subtle blend of spices to enhance flavor, including simple salmon recipes. Madhur's Fish in a Green Sauce dish requires fish steaks, which can either be salmon or kingfish. The fish is rubbed with salt, pepper, cayenne pepper and ground turmeric. The Green Sauce contains cilantro, garlic, onion, hot green chilies, tomatoes, grated ginger, lemon juice, salt, garam masala and cayenne pepper.
